Bavarian Donuts Baked in an Oven

Bavarian donuts are one of the Czech favorite dishes, especially among kids. They are pillow-soft and fluffy, traditionally filled with plum jam and decorated with a cottage cheese sweet cream. The traditional ones are fried in an oil, but these ones are too greasy. I prefer to bake them in an oven, they are delicious and much lighter.

TIME FOR PREPARATION: 30 minutes for dough preparation, 3-4 hours for rising of the dough, 10 minuts for baking, 20 minutes for decoration | DIFFICULTY: INTERMEDIATE | SERVES: 18 donuts

Calories total: 2 000 kcal / 111 kcal per one donut

INGREDIENTS - Dough:

Dry ingredients:

250 gr of all-purpose flour or plain flour

35 gr of cane sugar

4,5 gr of instant dry yeast

pinch of salt

pinch of ground Bourbon Vanilla

Other ingredients:

1 egg

35 gr of melted butter

110 ml of lukewarm milk and Rhum – I add 30 ml of the Rhum and the rest of the milk, the Rhum will add its delicious taste to the dough

INSTRUCTIONS

1. Mix all the dry ingredients in a mixer bowl, then add all of the other ingredients.

2. Mix the ingredients in a stand mixer with a dough hook. If you have KitchenAid Stand Mixer, first choose the lowest speed 1 until the ingredients form in a dough.

3. When the ingredients form in a dough, increase the speed to medium (KitchenAid speed 2) and mix for at least 10 or 15 minutes. The dough should be smooth and silky.

4. Put the dough in a big glass bowl and cover the bowl with plastic wrap. Let the dough rise at room temperature for 1-2 hours or until it’s doubled in size or even better tripled in size.

5. Carefully move the dough from the bowl to a clean well floured surface. Sprinkle the flour on the dough and roll it making sure that the dough doesn’t stick to the surface. The dough should be approx 1 cm thick.

6. Use a 5-6 cm cookie cutter and carefully stamp out as many circles as you can. Reuse the leftover dough to make more dough circles.

7. Move the dough circles to a big baking sheet with a parchment paper on it. Cover with a clean towel and let the dough rise until its doubles in size, or at least for 45 minutes.

8. Preheat an oven to 180°C and place the baking sheet into it.

9. Bake the doughnuts for about 10 minutes until they get gold.

10. When the doughnuts are a bit colder, half them with a knife. Put some plum marmelade on both halves. Put the halves back together.

11. Decorate the doughnuts with a sweet cottage cheese cream.

They are the best when served lukewarm yet. 🙂
